In a large saucepan, lightly fry onion, garlic and celery in the vegetable oil, until onions become slightly translucent.
Add the vegetable stock powder and fry for a further minute, or until mixture starts to brown slightly.
Add water and lemongrass and bring to a boil.
Add the butternut, and cover until boiling.
Reduce heat and allow to simmer for 45 minutes to 1 hour.
More water may be required, depending on how thick a soup is desired.
Remove from heat, remove lemongrass stalks and blend the soup until fine.
